Dairy-Free Mashed Potatoes: Kidney Friendly

Ingredients
  

  • 6 Medium Potatoes
  • 1/2-1 cup Unsweetened Cashew Milk
  • 3 tbsp Olive OIl
  • 1 tsp Black Pepper
  • 1 tbsp Chopped Parsley
  • 1 tbsp Chopped Chives

Method
 

  1. Rinse, peel, and boil potatoes for 5-10 minutes
  2. Rinse potatoes, add new water, and boil again in new water for another 5-10 minutes
  3. Drain water and place potatoes in a large bowl
  4. Mash potatoes with a hand mixer or potato masher and add cashew milk, olive oil, and black pepper
  5. Stir until well combined
  6. Top with parsley and chives
